
I love Strawberry Pie…..actually- I adore Strawberry Pie! I have such fond memories of this pie growing up. My parents had a wonderful strawberry patch where we harvested basket upon basket of strawberries. For a few weeks we would make strawberry jam, strawberry shortcake and strawberry pie- and just eating them fresh off the stem. My mom was quite a baker and she always said that she liked this strawberry pie recipe because it let the the natural taste of fresh strawberries shine through.

We just received a flat of strawberries from our wonderful fruit purveyor- Sid Wainer and Sons.
The strawberries smelled wonderful and spoke- farm fresh! Our daughter April was just talking about how smells reminded her of past happy memories. These strawberries spoke to me and my mind wandered back to when I was a child picking strawberries from our garden. I quickly decided it was perfect timing to make strawberry pie for our guests.
The recipe shown below is my mom’s original recipe. Check out a previous blog for her pie shell recipe
- 1 cup sugar
- 1 cup water or strawberry juice
- 5 teaspoons corn starch
- 1½ oz. strawberry jello
- 1 quart fresh strawberries
- 1 pie shell, prebaked
- In medium sauce pan, add one cup of sugar with one cup of water or juice and mix in the cornstarch. Bring to a boil until sauce thickens. Mix in strawberry jello. Take off heat and mix in berries. Immediately place in cooled pie shell that has been prebaked. Refrigerate until ready to eat.
- We love to serve it with fresh whipped whip cream.
