We love to support our local Brewster Historical Society and have been astounded with their fund raising efforts to raise monies to purchase a new home for their museum. The Captain Elijah Cobb House is just down the street from the Freeman on Lower Road. The volunteer group that runs the society- including our lawyer, Steven Jones and local author, Sally Gunning have worked tireously to make a dream come true of having a permanent home for the historical society.
Every summer the society organizes two tours- including the Widow’s War Tour of Satucket Village, which is based on Sally Gunning’s acclaimed historical novel, The Widow’s War and and the Sea Captain’s Tour of Brewster- both are great ways to learn about our historical town of Brewster, Cape Cod. We are the last stop for the Sea Captain’s Tour and provide a tour of the first floor of our inn along with some great history of our building and the original owner, Captain William F Freeman. Because all good things involve good food, we end the tour with an afternoon repast on our side porch overlooking our beautiful gardens and pool. Past tours included tea sandwiches and cookies but feeling the need to try something new, I decided to serve bruschetta along with some of our favorite cookies, apple cider and flavored waters. Since we have so many tomatoes in the garden I decided to include a tomato bail and garlic version along with a sweeter Strawberry and Goat’s Cheese topping. We were delighted to see how much the guests enjoyed our repast.
The tomato and garlic bruschetta really needs no recipe as we just diced the garden tomatoes (removing the excess seeds) and added basil, garlic and salt and pepper to taste.
For the strawberry version, I relied on my trusted source of Pinterest to come up with this recipe. It really was delicious and Ohhhhh so easy!
- 14 Fresh strawberries
- French Baguette, sliced
- 4 oz. goat's cheese
- balsamic vinegar
- 6 basil leaves
- fresh cracked pepper
- Dice strawberries and place in medium bowl.
- Cut thin slices of basil with kitchen scissors
- Slice baguette and speed lightly with butter or olive oil, Place on cookie sheets and place in oven (350) until lightly browned
- Once toasted, spread with goat's cheese
- Top with strawberries and then add the slivers of basil leaves
- Drizzle lightly with balsamic vinegar
- Top with ground pepper
