Every once in a while you come across a recipe that knocks your socks off! These Raspberry Bars are over the top delicious. I had actually forgotten about this recipe. Thankfully, I had included these bars in our Captain Freeman Inn cookbook. Our Chef Nick was looking for something to make for our afternoon tea at the Captain Freeman Inn and he came upon this recipe……I am so glad he did! The raspberries add a sweetness and the almondsĀ a crunchiness. I am not usually one to partake in our afternoon teas but I must confess I have had two of these delicious treats this afternoon:)
2 cups All Purpose Flour
1 cup sugar
3/4 cup almond flour
1 egg yolk
1 teaspoon almond extract
2 sticks unsalted butter
1 cup raspberry jam
1/2 cup almonds
Preheat oven to 350. Lightly grease a 9×9 baking pan with butter. With an electric or stand mixer, combine flour, sugar, almond flour on low speed. Add butter one tablespoon at a time. In a separate bowl whisk the egg yolk with the almond extract and add to the flour mixture until just combined. Reserve one cup of the dough. Press dough into the prepared pan evenly. Spread jam evenly over the dough without touching the sides of the pan. Sprinkle the remaining dough and sliced almonds over jam. Bake 25 minutes. Completely cool before serving.
